I posted about making this bread the other day and it is divine. The texture is wonderful, it rose great, and it is super simple and fast concerning bread recipes. It only has to rise once. I made two 4" loaves, but my sister has made two 5" loaves with it. I used whole red wheat when making mine, but my sister doesn't care for the taste of red wheat so she uses whole white wheat and it comes out great both ways. You could even get crazy and mix half red wheat and half white wheat.
(When I say white wheat I do not mean white flour, the bag of flour should specifically say whole white wheat flour. If you get your wheat at the canary you can buy red or white wheat)
3 1/2 C whole wheat flour
1/3 C gluten flour
1 1/4 Tbsp instant yeast
2 1/2 C steaming hot tap water (120-130 degrees)
1 Tbsp salt
1/3 C oil
1/3 C honey or 1/2 C sugar
1 1/4 Tbsp bottled lemon juice
2 1/2 C whole wheat flour
Mix together wheat flour, gluten flour, and yeast in large bowl. Add water all at once and mix for 1 minute; cover and let rest for 10 minutes. Add salt, oil, honey or sugar, and lemon juice and beat for 1 minute. Add last flour, 1 cup at a time, beating between each cup. Beat for 6-10 minutes (if you are doing in a a Kitchenaid, don't be afraid to make that thing work) until the dough pulls away from the sides of the bowl. This makes a very soft dough.
Preheat oven to lowest setting and turn off. Turn dough onto counter top; divide and shape into loaves. Place in oiled (or sprayed) bread pans. Let rise in warm oven for 30-40 minutes until the dough reaches the top of the pan. DO NOT remove bread form oven; turn oven on to 350 degrees and bake for 30 minutes. Remove from pans and cooks on racks.
Slice a piece off while it is still warm, spread with butter and jam or butter and honey and enjoy!!! You will never want to eat store bought bread again.
